2021 Seven Apart Basalt
Cabernet Sauvignon
98 points - Jeb Dunnuck00 00 00 00
Visually, this wine is a deep crimson color with vibrant aromas of ripe blueberries, prune, dried herbs and a pleasingly pronounced minerality. A well-balanced wine that greets you with generous soft tannins building to a full-bodied mid palate culminating in a lengthy, silky finish rife with flavors of cocoa and dried black cherries.
100% Cabernet Sauvignon, 72% New French Oak, unfined and unfiltered. The fruit was hand harvested at night between October 6th and October 19th to ensure it arrived cold in order to minimize oxidation. The grapes were slowly fermented at cooler temperatures to help preserve aromas. Once the initial fermentation was complete, the wine was transferred to French oak barrels where Malolactic fermentation takes place to soften and stabilize the wine. The wine was then racked off its lees and aged for 24 months in barrels before it was bottled on December 18th. The release is taking effect in April of 2024.
Approachable upon release for lovers of young wine. Cellaring 5-8 years will reward with a slightly developed bottle bouquet. This wine is built for longevity, easily aging 25+ years. Decanting this wine 1-2 hours is recommended.
Produced from the exceptional Stags Ridge Vineyard, located on Atlas Peak at 1,450 feet elevation. 2021 was a great vintage for Napa Valley. Limited winter and spring rains resulted in lower than normal yields due to smaller berries. These drought conditions, followed by a perfect summer season, allowed the winemakers to obtain optimal balanced ripeness. As a result, the wines are well-structured, full-bodied, and intensely flavored.
